Happy Monday! Another week another recipe, I've been receiving lovely feedback from all of you and it makes me so ecstatic :) I'm brainstorming new and easy recipes (especially healthy treats) to keep you feeling your best without the lethargic effect you get from too much refined sugar - especially during the holidays. I hope my recipes encourage you to bake and cook healthier because you really don't need to associate healthy food with being boring or bland! So below I've attached the recipe for my easy, no-bake vegan cookie dough bites - only 8 ingredients and I'm sure you might have most of them lying around in your pantry especially if you're plant based and into baking therapy!
- 1.5 cups almond flour
- 1/4 cup coconut flour
- 2 tablespoon coconut oil
- 1 teaspoon vanilla extract
- 2 tablespoon maple syrup
- 1/4 teaspoon pink Himalayan salt
- 1/3 cup chopped dark vegan chocolate or chocolate chips (I use 70% cacao or higher)
- 2 tablespoons coconut milk
(Form into bite sized balls and freeze for 1 hour) you can store these in your freezer for up to one month!!
